Envolver as claras batidas em castelo. As colheres mencionadas são mais ou menos o que acho que usei, porque deitei direito das caixas para a tijela.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;Misturar bem com uma colher de pau os ingredientes: ovos, açúcar, manteiga, mokambo, canela, farinha. Levar a forno quente (200º), na prateleira mais baixa, para que coza bem por baixo sem torrar. Não deixar cozer muito, para que fique fofinho e ligeiramente húmido. Colocar o queijo ralado uniformemente &lt;span style="font-size:78%;"&gt;(uso sempre uma embalagem inteira, porque gosto mesmo muito de queijo).&lt;/span&gt; Lavar os cogumelos e cortálos fatiados. Espalhá-los sobre a pizza. O fiambre pode ser cortado em fatia fina, e desfiado; ou em fatia grossa &lt;span style="font-size:78%;"&gt;(+- 1 cm)&lt;/span&gt;, e cortado em cubos. Colocar o fiambre na disposição mais adequada ao tipo de fatia. Cortar a banana em rodelas e colocar na pizza. Esta versão é exactamente igual, mas como não tinha tempo para fazer as bolinhas, deitei o preparado numa travessa. O efeito é diferente, mas também se come bem, aliás, bem demais.&lt;br /&gt;&lt;br /&gt;Levar ao lume o leite condensado misturado com o côco, sempre em lume brando e mexer continuamente. Primeiro a consistência fica meio líquida e depois começa a ficar mais espessa. Quando o preparado ficar compactado, como se fosse uma bola grande e não colar ao tacho, significa que está pronto. Retirar para um prato largo e espalhar. Sobre esta camada, colocar a perna de perú, povilhar com sal, raspa de limão e de laranja e regar com azeite. Acrescentar à travessa um pouco de água e vinho branco. Assar no forno até que a carne se solte facilmente do osso. Pode ser acompanhado com vegetais, arroz ou batata frita. É um prato de fácil e rápida execução, contudo leva muito tempo a assar no forno. Eu usei 500 gr de carne, 1 ovo, 1 cebola grande e 2 tomates.&lt;/p&gt;&lt;p&gt;Misturar bem a carne com a salsa muito picada, o sal, a pimenta e os ovos. Se necessário, para unir mais, juntar um pouco de farinha ou pão ralado. Fazer bolas do tamanho que se desejar e envolvê-las em farinha ou pão ralado. Num tacho, colocar o azeite e a cebola cortada em rodelas. Deixar que a cebola fique transparente e juntar o tomate bem maduro, cortado em pedaços médios. Deixar apurar e juntar água suficiente para tapar as almôndegas. Retirar do lume para uma tigela e deixar arrefecer um pouco. Juntar os ovos, um a um, mexendo entre eles para que não engrossem. Juntar uma porção de farinha para três de açúcar, podendo esta quantidade se adaptada ao gosto de cada um. Envolver os frutos secos &lt;span style="font-size:85%;"&gt;(eu usei amêndoas)&lt;/span&gt; grosseiramente triturados. Forrar uma forma quadrada ou rectangular com folha de alumínio, deitar a massa e levar ao forno a 170º até ter a consistência pretendida. Quando a cebola estiver translúcida, retirar o dente de alho e acrescentar os coentros picados, duas colheres de polpa de tomate, o picante a gosto &lt;span style="font-size:85%;"&gt;(eu usei piri-piri)&lt;/span&gt; e sal. Quando começar a ferver, acrescentar o camarão e deixar apurar. Quando o camarão estiver quase bom, refrescar com o sumo de limão e deixar mais um pouco. Juntar o tagliatelle previamente cozido em água e sal, e envolver suavemente.
